Sweet and Sour Ground Beef

This is a quick and tasty (sorry, Jay) meal for a weeknight.
 
1 pound ground chuck
1 package frozen San Francisco blend vegetables (broccoli, red pepper, onion, water chestnuts etc)
1 tablespoon brown sugar
1/2 teaspoon (or more) ginger
1 clove garlic, minced
pepper to taste
8 ounce can pineapple tidbits, drained and juice saved
2 tablespoons soy sauce
1 tablespoon vinegar
1 tablespoon cornstarch
2 tablespoons water
hot cooked rice
 
Brown ground beef in a large skilled and drain excess fat. Stir in veggies, brown sugar, garlic, pepper, soy sauce, pineapple juice and vinegar. Bring to a boil, reduce heat and cover. Simmer till veggies are tender but still crisp - maybe 4 or 5 minutes. Add pineapple.Combine cornstarch and water and stir in. Cook another minute or two until thickened. Serve over rice.
